Cookin with The Columns: Tried and true summer classic


Annette Gibson’s sister, Tommye, sent me a text message today asking about an Easy Livin’ cookbook.  Hers is falling apart and she had lost the page with this recipe on it!

She says she has made it many, many times but wasn’t sure she could remember all of the ingredients.

It was originally put in the cookbook by Betsy Perry.  I sent her the recipe and am going to mail her 4 new cookbooks this week but I thought if she likes it this much, you might want to try it too.

It would be perfect for Memorial Day weekend or any kind of summer get together.  By the way, you can still get a copy of the cookbook at Tunica Academy for only $10 each.  That’s a bargain and the school benefits too!  It’s full of great recipes and you really need one if you don’t have it.


12 cups or (4 1/2 pounds) potatoes, cut up and boiled

9 hard boiled eggs, chopped

1 1/2 cups celery, chopped

2 1/4 cups mayonnaise

3 Tablespoons chopped onion

4 teaspoons sugar

4 teaspoons vinegar

4 teaspoons prepared mustard

3 teaspoons salt

1/4 teaspoon pepper


Mix together mayonnaise, onions, sugar, vinegar, mustard, salt and pepper.  Add eggs and celery.  Add all to potatoes while they are still warm.  Toss gently just to mix.  Chill overnight or all day.

Makes 16 to 18 servings.
