Cookin with The Columns: An Easter tradition

 

My grandmother (everybody called her Bu) made the most delicious coconut cake in the world.  We had it every year for Easter.

She would buy a fresh coconut, poke a few holes in it with an ice pick to drain out the milk, then my granddaddy would hit it with a hammer several times to break it apart.  She would dig out the coconut, grate it by hand, and then put it on top of homemade seven minute icing (which is a long process to make) and put it in the refrigerator to chill.
