Cookin with The Columns: Reeling in a classic recipe

Brooks brought me a cookbook  that she came across the other day.  It is a collection of recipes put together by Evelyn Block and Marshall Perry when their husbands, Clyde and Neil, started grain-fed catfish farming.

The introduction says “From the bottom of the pond to the top of the menu, the catfish has come a delectable distance...thanks to a new breed of fish farmer who, through scientific technology, is bringing an improved product to the dinner plate and to the diner’s palate.”  I never realized that Mr. Neil had been a catfish farmer!  The things I learn after living in Tunica for a long time!
