As I am writing this column today, it is raining (again) and this sounded like a good way to brighten up a rainy day.  Vegetables are one of those things that I seem to do the same way over and over.  This looks like an easy way to freshen up those vegetables.  It’s from the Easy Livin’ cookbook and was submitted by Mary Jarvis.
