Cookin with The Columns: A good summertime casserole
Meg and her neighbor/friend, Lisa Konupka, are experimenting with lots of new recipes. This is a squash recipe by Paula Deen that Lisa tried this week that Meg said was so good, they made it again the next night with zucchcini.
That’s true with a lot of recipes--you can do an “old favorite” dish with a different vegetable or with a couple of different ingredients and it changes the whole dish. She says you can also make this as just a casserole if you don’t want to stuff the shells. Just spray the dish with Pam and cook the same way as in the shells. Sounds delicious!
