Cookin with The Columns: Super food!

You know, it seems like we go from one “reason” to eat, directly to another one!  
Starting in October, there’s all that Halloween candy that we have to finish up eating.  Then Thanksgiving, Christmas, and New Year’s parties.  Now it’s that big ball game that takes place this Sunday night.  Then coming up in a couple of weeks is Valentine’s Day.

 I’m all in favor of eating, but seems like sometimes we center too many occasions around what we are going to eat and usually lots of it.  But just in case you don’t have plans yet for something to cook for the game night, here’s a recipe that I got from Annette Gibson several years ago that is a good, but easy, “party food”.
TOMATO & BACON CUPS
1 can flaky Grand biscuits
1 cup shredded swiss cheese
1/2 cup mayonnaise
1/2 cup diced onion
1 can diced Rotel tomatoes, drained
1 teaspoon basil
bacon, cooked & crumbled

Preheat oven to 400 degrees.  Mix together cheese, mayo, onion, tomatoes, basil and bacon.  Divide each biscuit into three parts and place in mini-muffin pans that have been sprayed with Pam.  Fill each cup with mixture.  
Bake for 12 minutes or until lightly browned.
