Cookin with The Columns: Peanut Butter Spectacular

Almost everybody loves peanut butter.  This is a pie that I think became popular when Jimmy Carter was President and everybody referred to him as the peanut farmer from Georgia.  It’s a very light and refreshing pie for the summer and is quick and easy to put together.  (Even you could make it, Mr. Neil!)  It calls for a graham cracker crust, but I like to make it with the chocolate cookie crust that you can buy in the same area of the grocery store with the graham cracker pie crusts.  The chocolate crust makes it taste kinda like a Reese’s peanut butter cup.  Can’t beat a pie that tastes like a candy bar!

1 (8 ounce) package cream cheese, softened
1 cup powdered sugar
1 cup crunchy peanut butter
1 (8 ounce) carton cool whip

Cream the cream cheese with a mixer.  Add sugar and peanut butter and beat until well mixed.  Fold in cool whip.  Place in graham cracker (or chocolate cookie) crust.  
Refrigerate or freeze.
